This is what makes Sicilian pizza stand out and become a comfort food for people who love pizza with a little more bite. Sicilian pizza is an indulgent treat that always hits the mark and is suitable for all occasions, from casual gatherings to family gatherings. However, it also comes in various types, offering different flavours and experiences. 

What Is Sicilian Pizza

Sicilian pizza is a unique Italian pizza known for its fluffy dough and square shape. Unlike the classic round pizzas, Sicilian pizza is made with a high-hydration dough, giving it a soft, airy texture that’s perfectly complemented by its hearty toppings. Traditionally topped with tomato sauce, mozzarella, and various meats or vegetables, it’s a pizza that’s both filling and satisfying. Many people love the Sicilian style because it offers a good balance of a crispy crust and soft, moist inside, with every bite delivering a mouthful of rich flavours.

The Origins of Sicilian Pizza

Originating in Sicily, this style of pizza was created as a street food, designed to be an affordable, satisfying meal for people on the go. Initially, it was a simple flatbread topped with locally grown ingredients, such as tomatoes and olive oil. Over time, Sicilian pizza evolved into the dish we know today, with a thick, spongy crust that holds a generous amount of toppings. While it became popular in the United States, especially in the 20th century, its heart has always remained in Sicily, where it’s still enjoyed as a staple of local cuisine.

Sicilian Style Pizza Characteristics

Sicilian-style pizza certainly has distinct characteristics, especially its iconic thick, spongy crust. However, in addition to its shape and texture, which differ from those of the usual Neapolitan pizza, it also has a different method of preparation, a different placement of the sauce, and many other details you need to know.

Dough texture and hydration

One of the standout features of Sicilian pizza is the dough. The high hydration level means more water is added to the dough, allowing it to rise beautifully in the oven. This extra moisture creates a soft, airy dough that contrasts wonderfully with the crispy crust. The dough is allowed to rise slowly, which not only gives it its fluffy texture but also enhances the flavour. It’s a dough that’s both satisfying and indulgent, and it’s what makes Sicilian pizza so unique.

Baking method and pan use

Although it is pretty thick, Sicilian pizza has a unique texture, with the crust and bottom quite crispy. The reason is its baking method and the pan used, which are undoubtedly different from those of traditional Neapolitan pizza. Sicilian pizza is baked in a well-oiled pan, which makes the bottom and edges more golden and crispy. Moreover, it is also baked at a very high temperature (usually around 450-500°F) for 20-30 minutes, longer than a thin-crust pizza. 

Typical toppings and sauce placement

One unique aspect of Sicilian pizza making is placing the Pizza sauce on top of the cheese. This is to prevent the cheese from burning during the relatively long baking process. Moreover, it uses lighter toppings than those on a typical pizza, such as tomato sauce, onions, anchovies, breadcrumbs, oregano, and sometimes caciocavallo cheese. However, some American Sicilian pizzas still use mozzarella cheese for a more satisfying experience.

Types of Sicilian Pizza You Should Know

Sicilian pizza comes in a variety of styles, each offering a different flavour and ingredient profile. Whether you prefer classic recipes or newer variations of pizza, there's a Sicilian pizza to suit every taste. Let’s explore the different types you should know about.

Sfincione

Sfincione is the traditional Sicilian pizza that’s often considered Sicily’s answer to focaccia. This version features a thick, spongy dough topped with a simple yet flavourful tomato sauce, onions, anchovies, and a generous layer of grated cheese. The result is a pizza that’s both hearty and savoury, with a comforting flavour that’s perfect for any occasion. In Sicily, it’s often enjoyed during the Christmas season, making it a festive favourite.

Sfincione Bagherese

Sfincione Bagherese is a unique variation of the traditional Sicilian pizza, hailing from the town of Bagheria. It has the same thick, spongy dough, but it's the toppings that make it stand out. Along with the tomato sauce and onions, you’ll find anchovies and caciocavallo cheese, giving it a richer, more intense flavour. Additionally, a sprinkle of breadcrumbs adds a crisp top, making every bite even more satisfying. It’s a pizza that brings the bold flavours of Sicily right to your plate.

Modern Sicilian Tray Pizza

Modern Sicilian tray pizza has become a popular choice for large gatherings or family-style meals. Baked in a rectangular tray, this pizza offers a thick, airy crust that can hold a variety of toppings. When it comes to Italian pizza, Sicilian and Neapolitan are two of the most iconic styles. The key difference lies in the dough and baking method. Sicilian pizza has a thick, spongy crust that’s baked in a rectangular pan, while Neapolitan pizza features a thin, chewy crust baked in a woodfired oven. The toppings also vary because Neapolitan pizzas are typically topped with just a few simple ingredients, such as mozzarella, tomatoes, and basil. In contrast, Sicilian pizzas often have more toppings, including meats and vegetables. Both are delicious, but they offer different pizza experiences.
